The making of malt

We tailor every stage of our malting process to unlock a world of choice and flavour to meet our diverse customer needs.

Steeping

The finest grains are gently soaked in steeping tanks with alternating cycles of water immersion and air rest.

Germination

As water content rises, germination begins and our grains begin to sprout. This awakens natural enzymes that lay the foundation for our flavour and aroma magic. Rootlets develop as the grain’s internal structure breaks down, producing what we call ‘green malt’, the essential intermediate stage before kilning.

Kilning

Dried carefully through different malting techniques at carefully controlled temperatures, the malt’s moisture content falls, allowing its colour to develop and aroma to emerge.

Roasting

With precision heating, every malt takes on a distinctive character, ranging from golden caramels with gentle sweetness across a whole range of characteristics to richly roasted with bold, deep flavours and colour.
